Summer continues with tasty treats for August. Surprise!!! Here's one of my favorite recipes "Sweet Potato Pie Ice Cream" I'm sharing with my Sibley/Campbell Family members. It's a perfect combination with the recipe featured during July last month.

"Sweet Potato Pie Ice Cream"


A Personal Treat I've Enjoyed Eating Winter, Spring, Summer, And Fall


Ingredients

  • 2 Large Eggs

  • 3/4 cup sugar

  • 2 cups Heavy Cream

  • 1/4 slice of your favorite sweet potato pie (baked, ready to eat)

  • 1 cup milk




Father & Son: Wallace jr. & Wallace sr.


Directions


Whisk the eggs in a mixing bowl until light and fluffy. 1 to 2 minutes. Whisk in sugar, a little at a time. then continue whisking until completely blended, about 1 minute more. Pour in the cream & milk and whisk to blend. Pour sweet cream base into ice cream maker and churn for 15 - 10 minutes. Cut sweet potato pie (with crust) into small dime-sized chunks. Pour chunks of sweet potato pie into sweet cream base and let churning continue. 10 - 15 minutes if you prefer chunky ice cream. 25 - 30 minutes if you prefer smooth ice. Preparation 45 - 60 minutes. Makes 8 servings.
