Hello Sibley/Campbell Family,
You must admit 2020 has been a year to remember!!! But amongst the quarantine and social distancing, we've had DELICIOUS recipes from our family members. Our Sibley/Campbell Family member, Jan Elizabeth Campbell, is back for the month of December with her special recipe for Banana Pudding. A dessert that's so delicious we're featuring it twice this year.

Jan's Banana Pudding
Ingredients:
3/4 cup sugar
1/3 cup self-rising flour
3 eggs, separated
2 cups milk (I use half evaporated, half water....or you can use homogenized milk)
2 boxes of Nilla Wafers
4 ripe bananas

1. Mix 1/2 cup sugar and flour in a single pot or a double boiler. Mix 3 egg yolks and milk stirring constantly uncovered until desired thickness is achieved. While pudding is cooking layer bowl with wafers, take about 8 and crush and sprinkle over 1st layer to close up open spaces between wafers. Next layer bananas and continue with a layer of wafers & bananas until you have 3 layers of wafers and 2 of bananas. I use fewer bananas because I prefer more pudding.

Next after layering and pudding are complete add vanilla extract, stir then pour over pudding. Mix egg whites into a custard, add remaining 1/4 cup of sugar and beat until stiff. Spoon on top of pudding and edges. Lift custard upward with fork tines. Bake at 350f on top rack until custard is a golden brown. Let cool for 20 minutes or refrigerate. Enjoy!!
